Cherry Chai Apple Pie
Ingredients
Filling:
6 medium MCIntosh Apples, peeled and diced
1 tbsp lemon juice, freshly squeezed
1 jar Brins Cherry Chai Jam
3 tbsp brown sugar
3 tbsp sugar
½ tsp cinnamon
⅛ tsp nutmeg
Pinch salt
1 tbsp cornstarch
2 tbsp unsalted butter, cubed
1 egg
Dough:
2 ¼ c flour
2 tsp sugar
1 tsp salt
6 tbsp chilled unsalted butter, cubed
6 tbsp frozen shortening, cubed
6-8 tbsp ice cold water
Directions
Make Dough: In a medium bowl, sift together flour, sugar and salt. Cut in the butter and shortening with your hands or with a pastry cutter until the mixture looks like pea sized crumbles. Pour in 6 tbsp cold water and mix everything with a wooden spoon, adding more water if needed to form a ball. You don't want it to be too wet, just not crumbly. Form dough into two balls, cover in plastic and chill for at least 30-45 minutes.
Make Filling: Place apples in a large mixing bowl and toss with lemon juice. Stir in Cherry Chai jam and the next 6 ingredients.
Assemble & Bake: Preheat oven to 425°F. Make an egg wash by using a whisk or fork to beat egg with 1 tbsp water in a small bowl; set aside.
Roll out both balls of dough (keep one in the fridge while rolling out the other) into 12-14-inch rounds. Place one round in a 9-inch pie pan, pressing dough into it, to make sure there are no air pockets. Pour prepared filling onto dough lined pan. Add cubed butter over filling. Top with 2nd dough round, crimping edges as desired, slice 4-5 venting holes and brush evenly with egg wash
Place pie on a sheet pan and bake for 15 minutes, then lower heat to 375°F, baking 45 minutes more. Remove from oven and allow to cool for at least 4 hours before serving.

How many of you Irish folk eat Boiled Dinner. Here is my recipe.
On sear setting, sear beef roast. Then put these ingredients in with meat.
Garlic One Rutabaga. In large chunks. Carrots Onion Potatoes for all Large chunks. 1 cup of beef broth for pressure cooking. Celery if you like. Large chunk cabbage. Some Worcester Sauce and don't forget half cup of Kikkoman Teriyaki sauce. Pressure cook meat as directed in book per pound. At half of that time open pressure cooker and add all veggies.
Season while cooking.
When done put flour thickening and make gravy. Serve. A little horseradish never hurt anyone. Best gravy you ever had.

For all those who got toilet paper and forgot to buy food...
Some of us can be looking at a mandatory 3 month quarantine as they are proposing in Europe (especially for the elderly), so...
Add to 6 or 8 qt instant pot (or slow cooker)...
1 1 lb bag of 9 or 15 dry bean soup mix (or any white bean of choice) No need to pre-soak or cook beans.
1 ea chopped onion, red or orange pepper, 2 stalks celery
1 c carrots - baby or chopped
1 tsp minced garlic or 2 cloves or 1/2 tsp garlic powder (more optional)
4 c chicken broth (1 carton or equivalent paste/powder)
4 c water
2 tbsp Worcestershire sauce
2 tbsp dijon mustard
1 tbsp liquid smoke
1 or 1/2 tbsp according to taste of dry parsley
2 tsp chili powder
Salt and pepper to taste
Portion of cooked ham or chicken to add flavour (optional)
Stir well. Put on lid, seal, and set to 45 minutes (pressure or manual button). Release or let self release. (10-12 hours slow cooker)
Makes approx 15 bowls. Cost roughly $5. (That is $20/mon per person for 2 healthy meals a day that will see you through home isolation all on it's own) Add appropriate amount of rice/quinoa (or even noodles) if you want to bulk it up.

I'll be making beef jerky, so I can store it. I picked up a nice London Boil yesterday.
3 months would be a long time to store up food. I'm at lost as to where to start. I look around and figured, well there's lots of cereal! 9 boxes! It's something I pick up anyway, when it's on sale.

My intention with the recipe above was a cheap and nourishingly simple way to fill in the gaps if mandatory quarantine becomes a reality for up to three months or the distribution system collapses, and people are caught short. Dried foods are often overlooked on the shelves at this point because a majority of people have lost the ability to cook anything not pre-processed. Instant pots make the process a breeze.
