Who Knew???On March 26th each year, National Spinach Day reminds us of the health benefits packed into this leafy green vegetable. Not only are there so many delicious ways that you can enjoy spinach, but it is also incredibly good for you! An annual plant, spinach grows natively in central and southwestern Asia.
Thought to have originated in ancient Persia, Arab traders carried spinach into India and later introduced it into ancient China. There it was known as “Persian vegetable.” The earliest available record of the spinach plant was found in a Chinese document. It noted that the spinach plant was introduced into China via Nepal.

A Dollar Bill Only Lasts 18 Months. Many countries use coins for their equivalent of one dollar because paper money wears out so quickly. U.S. dollar bills — the most circulated denomination of bill — only last an average of a year-and-a-half before they need to be taken out of circulation and replaced. In fact, though the U.S. Mint prints about $696 million (or 37 million bills) a day, 95 percent of that simply goes out to replace bills that are faded, torn, dirty, or otherwise unsuitable to be circulated. March 27th is the annual observance of National Spanish Paella Day. A rice dish from Spain, paella has become very popular and is known worldwide. It originated in its modern form in the mid-19th century in Valencia, on the east coast of Spain.
At lunchtime, workers in the fields would make the rice dish in a flat pan over a fire. They mixed in whatever they could find – such as rabbits, snails, and vegetables. Later, for special occasions, chicken was added. Paella has spread to every region of Spain and worldwide, using almost any type of ingredient that goes well with rice. There are many versions of recipes of paella. Key ingredients are saffron and olive oil. Saffron is an essential spice that also turns the rice into a beautiful golden color.

The Tip of Your Shoelace Has a Name. Those plastic or metal tips on both ends of your shoelaces are called aglets, and they're more important than you'd think. Just try lacing a shoe without them. In fact, aglets have been around since ancient Rome, though they were usually made out of stone or glass at that time. The word "aglet" comes from the old French aiguillette, meaning needle. Who knew so much thought and history went into keeping your shoelaces from unraveling? Who knew?

National Weed Appreciation Day on March 28th each year reminds us that some weeds are beneficial to us and our ecosystem. Humans have used weeds for food and as herbs for much of recorded history. Some are edible and nutritious, while other weeds have medicinal value.
Do you remember as a small child the fun you had with dandelions? Well, these bright yellow flowers serve a purpose. Dandelions are a food source for insects and some birds. Humans eat young dandelion leaves and enjoy tea and wine made from the leaves and flowers. The Native Americans used dandelions to treat specific ailments. Nutritionally, dandelions contain a source of vitamin A and C, calcium, iron, and fiber.

Coffee Makes the World Go 'Round. Coffee might be incredibly important to your morning routine, but it's even more important to the world economy. Produced by 25 million farmers in 50 countries all over the globe, coffee is second only to oil when it comes to the most traded commodities. Forty percent of the total produced every year comes from Brazil. Although New Yorkers drink the caffeinated brew at a rate seven times higher than the U.S. national average, Finland is the country with the highest per-capita coffee consumption. Who knew?
