5oh, Mahalo! I love mac nuts, so would love to try kukui nuts. Have seen some pretty things made from kukui. I assume that's from the tree wood. I've come to prefer mac nuts raw, but they're hard to find here and very expensive. Back on my visit to the Big Island we toured the Mauna Loa mac nut place, and the fresh roasted ones they gave us were very yummy!
It was back in 2001 when I had poke at Hulas restaurant in Monterey, CA. I had not heard of it before, but enjoyed it a lot. However, I'm not sure it was raw. My memory thinks it might have been lightly sauteed, and if so, could have been for local restaurant health requirement reasons or a mainland sensibility. It was kind of dark in there, so maybe I just assumed it was cooked. Not sure. But as you say, lately it's been showing up everywhere, even my local health type grocery store, Fresh Thyme. They have it in the seafood case but it has some hot peppers in it so I haven't tried it. I thought maybe it is sold raw and taken home and cooked. But from what you say, I assume it is meant to be eaten raw, like sashimi. I've also seen poke on t.v. cooking shows.
Huli huli chicken sounds good and now I'm sorry I didn't try it. BTW, Guy Fieri's "Diners, Drive-ins and Dives" program on the Food Network highlighted a place that makes rotisserie chickens on the spot over real fire, not in a machine. As I recall (it's been quite a while since I saw the program) it's on the highway in the vicinity of Kanehoe.

Hmm, Lomi Lomi Salmon. I wonder if they really massage it.
And here's a list of some other Hawaiian food places they've highlighted that you might want to try if you're in the area, or maybe already have.
There's was another place I saw on there a couple of times that's not on the list. It's called Opal Thai Food Restaurant in Haleiwa. On the t.v. episode, at least, they'll cook to order how you like it.
Hawai'i has so many special and unique foods! Even macademia nuts. Yummmmm....

Cuban Restaurants ALL Over Metro Miami (S Fl), that would be The Indigenous Food of The Area. I do not subscribe much to it, except for the Pork, but we cook it at home in a different style that the S Fl Cubans Use.

Delicious Minnesota grown sweet corn
My favorite is Amaize™. It's grown locally, but I think it is not exclusive to Minnesota.
