St. Louis is known as the home of toasted ravioli (supposedly created when someone accidentally dropped uncooked ravioli into hot fat instead of boiling water!), gooey butter cake (sorta like a cheesecake but much, much richer) and Provel cheese (a unique blend of cheese most often seen on Imo's Pizza, a distinctive St. Louis-style pizza made with a cracker-like crust and cut into squares, also known as "The Square Beyond Compare").

Some love moose, bear, duck. My fave is deer. No cholesterol or fat and an excellent taste.
Moonshine aka "Spring water" aka "Oh be joyful" gets passed around. It's clean so no hangover.

Kalua pork is unique to Hawaii. It is pork cooked in an underground oven using heated rocks inside the cavity of the pig and covered with banana and ti leaves, then sealed up with dirt. The seasoning is salt. In more modern times we have learned to come somewhat close using ovens or pressure cookers.

Poke - pronounced poh KAY Basically cubed raw fish, preferably Ahi (and not necessarily Sashimi grade) that is mixed with any or all (but not limited to the following): rock salt, Limu (a type of seaweed), Inamona (crushed, roasted Kukui Nuts mixed with some Hawaiian Salt), Green Onions (Scallions), Shoyu (Soy Sauce), Sriracha, Red Pepper Flakes, Tobiko (salted Flying Fish Roe), Mayonnaise, Avocado (like a California Roll). Basically what ever you want to mix in your Poke is up to you. Traditionally the first five ingredients are the basic ingredients to make a simple Poke dish. Quesadillas are, as far as I can tell, are only part of the menu at Chinese buffets in Texas. Cheese is not a constituent of traditional Chinese food. I had a second-generation American Chinese person who said she loves cheese. Then, she admitted her grandparents (who were born in China) don't eat cheese.

The Philly area is known for so many. You can't get a real hoagie or cheesesteak out of the area. Then there's scrapple. In fact I worked 13 years for the #1 scrapple company.
