I'm wondering what options there are currently for having a functional phone while traveling. Right now I am specifically interested in options usable in Ecuador, but also for Europe as we may get over there next year.

Usually people just "get a phone" where they're traveling. More like, get a phone plan when they're there - a "burner phone" or a "burner SIM card" if your phone supports SIM card swapping.
Best to ask your current provider if they have roaming services at your destination. If you have a GSM phone, you have the option of getting another SIM. That is, if you have an subsidy unlocked phone.
If you're on Verizon, you're at the mercy of Verizon.

Why not check with a travel agent specializing in the areas you wish to travel in? They may know of a cheap solution that everyone uses.

Few people we know that traveled out of country got plan with txt and limited phone coverage. They all had AT&T. make sure you know what you want to do for the time you were out of country

When I do, I never contract CELL TIME for the phone...I just look fir WiFi and WhatssApp doest the trick for free.

Keep the Phone once abroad on Airplane Status and you're all set...WiFi and Whatts App do the rest of the FREE Communications
